Provident Living

We had an excellent lesson this Sunday provided by Sister Cawley on Provident Living. Many of you were able to contribute to her lesson with valuable comments and experiences, and we truly appreciate your input!

The topic of Provident Living is broad. This post will focus on the Family Home Storage aspect of it.

From Providentliving.org we read:

"Our Heavenly Father created this beautiful earth, with all its abundance, for our benefit and use. His purpose is to provide for our needs as we walk in faith and obedience. He has lovingly commanded us to “prepare every needful thing” (see D&C 109:8) so that, should adversity come, we can care for ourselves and our neighbors and support bishops as they care for others.

"We encourage members world-wide to prepare for adversity in life by having a basic supply of food and water and some money in savings.

"We ask that you be wise as you store food and water and build your savings. Do not go to extremes; it is not prudent, for example, to go into debt to establish your food storage all at once. With careful planning, you can, over time, establish a home storage supply and a financial reserve."
—The First Presidency, All Is Safely Gathered In: Family Home Storage, Feb. 2007, 1

I wanted to share with you all a company called Grandpa's Grain. I don't know how my husband found them, since they have no website and they are based out of Idaho. But either way, we have found them, and we have been adding to our food storage with their products. They come to Tucson about once a month to deliver orders. The pickup is at the sports fields off the frontage road at Ina/I 10.

The following was their October Newsletter as I don't have a more recent one to share. This will give you information on what they offer.

Recipes

Ever thought of using wheat or beans in your holiday recipes? You may be surprised at how delicious and nutritious they can be! Here are a few ideas:

Sour Cream Sugar Cookies
½ c. butter 4-5 c. whole wheat flour (or a mixture of white and wheat)
2 eggs 2 tsp. baking powder
1 ½ c. sugar 1 tsp. baking soda
2 tsp. vanilla 1 tsp. salt
1 c. sour cream

Mix butter, eggs, sugar, sour cream, and vanilla. Add dry ingredients. Chill dough. Spoon into balls and flatten or roll and cut. Bake at 350 for 7-8 minutes.
Mock Pumpkin Pie

Make a "pumpkin pie" without using one bit of pumpkin! Your family will not even know! This is a must try!!

2 c. pinto bean puree
3 eggs
1 can evaporated milk
1 c. sugar
3/4 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
9-inch unbaked single piecrust
**I would also suggest red and yellow food coloring as well to make it look more like a pumpkin pie. It comes out a light brown color without any food coloring.**

Make your pinto bean puree by soaking the beans in 5 times more water than the amount of your beans. You may either soak them overnight or boil them for 2-3 minutes and let stand for 1 hour. Drain off the water, rinse (to remove some of those bean sugars that cause gas) and cook by a low boil for about 40 minutes until the beans are tender but not falling apart. Allow to cool. Drain, rinse, and put in a blender adding just enough water (1/4-1/2 cup) to blend them into a smooth, thick paste with no chunks. Scrape down the sides occasionally.

Add remaining ingredients (except piecrust) to blender in order given. mix well, then pour into piecrust. Bake in a preheated 425 degree oven for 15 minutes. Reduce temperature to 350 degree and continue baking for 45 minutes or until knife inserted in center of pie filling comes out clean. Cool. Garnish with whipped cream, if desired.

Stiff Refried Beans
Great, inexpensive addition to any fiesta!

Boil 2 cups water and whisk in 1 cup bean flour (made by grinding dry pinto beans). Cook and stir for 1 minute until mixture thickens. Reduce heat to medium-low. Cover pan and cook for 6 minutes, stirring occasionally. These are similar to canned refried beans.

Information on milling beans

Ever heard of bean flour? It may be your new best friend to sneak extra nutrients into your recipes and your family will never know! Simply grind whole, dry beans into a fine flour.

Bean flours are a great way to add nutrition and reduce fat in your recipes. Bean flour can be added to bread, casseroles, and even desserts without soaking, boiling, and waiting they way you do with whole beans. Bean flour can be added in small quantities to any baked goods without a change in flavor or texture. By adding bean flour to your bread it makes it a complete source of protein. Replace up to 25% of the white or wheat flour in our recipes with almost any variety of bean flour.

Add to soups, sauces, dips, sandwich fillings, and gravies. Whole dry beans, peas, and lentils ground into a fine flour will cook in only 3 minutes and make a creamy, nutritious soup.

Bean flour stores for up to 6 months on the shelf, 1 year if refrigerated.

Remember you can also use bean puree to replace any oil, shortening, or butter in your recipes. Simply blend bean flour or cooked beans and water to make a puree.

*Have recipes of your own you would like to share? Feel free to send them to us!*

Useful Information

~ 45 lbs of wheat berries in a 6 gallon bucket will yield approximately 158 cups of flour
~ 1 cup of grain yields approximately 1 1/4 cups of fresh milled flour
~ 5 lbs of wheat berries is enough for about 18-20 cups of flour, which is enough for five, 11/2 lb loaves of bread.

Hard, Soft, Red, White....what's the difference?

Hard vs. Soft
Hard wheat is higher in protein/gluten. It is excellent for all yeasted baking goods such as breads, rolls, etc. If not enough gluten is present you will get a dense, heavy loaf of bread. Soft wheat is lower in protein/gluten and works best with all non-yeasted baked goods such as cookies, pies, cakes, etc.

Red vs. White
Red is hard wheat that has a nuttier flavor and makes a slightly heavier bread. It is not typically used in sweet breads as the flavor will overpower the added flavors. White wheat is found in either hard or white. Hard white wheat is a newer variety of wheat that crosses the boundaries to not only be excellent in whole wheat bread, but also in cakes, pastries, cookies, muffins, and pancakes. Its mild flavor works well with most baked goods with added flavors.

Deseret Industries Needs You!

We have received word that the Tucson DI is in immediate need of clothing donations, they are completely out! During this holiday session, a special Christmas shopping night is set aside in early December, and it is feared that they won't have enough clothing to meet the needs.

Please sisters, if you have a few items that you feel you could do without, donate it! If you don't feel that you can make it down to the DI store, there are several drop off locations. There is currently a pod at our Stake Center as well.
